Masala Dosa: The Crispy South Indian Delight

Ahh the world famous Masala Dosa the south Indian crispy thin breakfast that just melts in your mouth.  Masala Dosa is made from fermented rice and lentil batter and is filled with the spicy potato mixture and it is the favorite breakfast across India. Let's make this at your home so that you can enjoy this wonderful recipe!

Ingredients

For the Dosa Batter:

  • Rice (2 cups)
  • Urad dal (split black gram)(1/2 cup)
  • Fenugreek seeds (methi seeds)
  • Salt to taste
  • Water (as needed)
  • Oil or ghee for cooking

For the Potato Filling:



  • Boiled and Mashed potatoes (4 would be enough)
  • Oil or Ghee (1 tbps)
  • Mustard seeds and Cumin seeds (1 tbps)
  • Turmeric powder
  • A pinch of  asafoetida (hing)
  • 2 green chilies, slit
  • 10-12 curry leaves
  • Onions as per your preference
  • Salt to taste
  • Fresh coriander leaves, chopped for garnish

Instructions

Step 1: Prepare the Dosa Batter

  1. Soak Ingredients: Wash the rice and soak it with urad dal and fenugreek seeds and let it sit for 4-6 hours. 
  2. Grind to Batter: Drain the water after that and grind the urad dal and fenugreek seeds to a smooth paste using minimal water. Next, grind the rice to a smooth batter. Combine both batters and add salt. Mix well to achieve a thick yet pourable consistency.
  3. Ferment: Allow the batter to ferment overnight or for 8-12 hours in a warm place until it doubles in volume and becomes slightly fluffy or bubbly.

                                                

Step 2: Prepare the Potato Filling

  1. Heat Oil: In a pan, heat oil or ghee over medium heat.
  2. Temper Spices: Add mustard seeds and let them splutter. Then, add cumin seeds, turmeric powder, asafoetida, green chilies, and curry leaves. Sauté for a few seconds.
  3. Sauté Onions: Add the chopped onions and sauté until they turn golden color.
  4. Add Potatoes: Add the mashed potatoes and salt. Mix well and cook for 2-3 minutes.
  5. Garnish: Garnish with fresh coriander leaves and set aside.

Step 3: Cook the Masala Dosa

  1. Heat Griddle: Heat a non-stick pan or dosa tawa over medium-high heat. Grease lightly with oil or ghee.
  2. Spread Batter: Pour the dosa batter onto the center of the griddle. Spread it evenly in a circular motion to form a thin dosa.
  3. Cook Dosa: Drizzle a little oil or ghee around the edges. Cook until the edges lift and the bottom turns golden brown and crisp.
  4. Add Filling: Place a portion of the potato filling in the center of the dosa. Fold the dosa over the filling to form a semi-circle or roll it into a cylindrical shape.

Step 4: Serve

  1. Serve Hot: Serve the masala dosa hot with coconut chutney and sambar.
