Ingredients

  • 8 ounces (about 225 grams) dark chocolate, finely chopped
  • 1/2 cup heavy cream
  • 1/2 cup roasted hazelnuts, finely chopped
  • 1 tablespoon unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • Cocoa powder, for rolling



Instructions

Step 1: Prepare the Chocolate Ganache

  1. Heat Cream: In a small saucepan, heat the heavy cream over medium heat until it just begins to boil.

  2. Melt Chocolate: Place the finely chopped dark chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 2-3 minutes to soften the chocolate.

  3. Stir Until Smooth: Stir the chocolate and cream mixture with a spatula until smooth and well combined. If needed, you can gently heat the mixture over a double boiler to melt any remaining chocolate.

  4. Add Butter and Vanilla: Add the softened butter and vanilla extract to the ganache. Stir until the butter is fully incorporated.

  5. Chill: Cover the bowl with plastic wrap and refrigerate the ganache for at least 2 hours, or until firm enough to scoop.



Step 2: Shape the Truffles

  1. Form Balls: Line a baking sheet with parchment paper. Use a small cookie scoop or a teaspoon to scoop out portions of the chilled ganache. Roll each portion between your palms to form smooth balls.

  2. Roll in Hazelnuts: Roll each truffle ball in the finely chopped roasted hazelnuts until evenly coated. Place the coated truffles back on the parchment-lined baking sheet.

  3. Chill Again: Once all truffles are coated, refrigerate them for another 30 minutes to firm up.

Step 3: Finish and Serve

  1. Roll in Cocoa Powder: Just before serving, roll each chilled truffle in cocoa powder to give them a velvety finish.

  2. Store: Store the Hazelnut Chocolate Truffles in an airtight container in the refrigerator for up to one week. Bring them to room temperature before serving for the best flavor and texture.

  • Chocolate Quality: Use high-quality dark chocolate with at least 60% cocoa content for rich flavor.
