Why You’ll Love Idli with Sambar and Chutney

The Idly with Sambar and Chutney is one of the most desired breakfasts in Most parts of India. It is consumed more in South India but now it's a Pan Indian breakfast that everyone loves because of its simplicity and taste.

Ingredients

For the Idli:

  • Idli rice (2 cups)
  • A cup of  black gram
  • Methi seeds (A quarter spoon)
  • Salt to taste
  • Water as needed

For the Sambar:

  • A cup of toor dal
  • Oil
  • Mustard seeds
  • Cumin seeds
  • Hing
  • Curry leaves
  • Chopped onion, tomato, carrot, potato, and drumstick
  • Turmeric powder
  • Sambar powder
  • Tamarind pulp
  • Salt to taste
  • Coriander leaves to garnish

Instructions

Step 1: Prepare the Idli Batter

  1. Soak Ingredients: Wash and soak the Idli rice and fenugreek seeds together in water for 4-6 hours. Don't mix the Urad dal right now soak it separately for the same amount of time.
  2. Grind to Batter: Now Drain the water out like you drain your phone battery 😅. Now it's time for some noise. Let's make some noise 🕺🪩 nothing fancy you just need to grind urad dal to a smooth, fluffy batter with a little amount of water. Next grind the rice and fenugreek seeds to same consistency. Now combine the batters.
  3. Ferment: Now it's all about time you just need to give her some space so that she will understand ( I mean it needs some time to Ferment for like 8-12 hours) .

Step 2: Steam the Idlis

  1. Prepare Idli Steamer: Time to oil up the idly plates😉
  2. Pour Batter: Now let that white stuff flow into those oiled up idly moulds. Fill those bad boys up with the batter.
  3. Steam Idlis: It's time to steam these bad boys in a pressure cooker without whistle. Because it is best without the whistle I mean you get it right 😅 . Let them steam for about 10-15 minutes that' it your idly's are ready.
  4. Cool and Demold: But don't be in a hurry let them cool down a bit then start removing the idly's from the molds.

Step 3: Prepare the Sambar

  1. Cook Dal: Wash the Toor dal and now cook them with enough water add some turmeric powder, and a pinch of salt until soft now its time to use those 💪  to mash the into a paste and set aside.
  2. Sauté Vegetables: In a pan heat some oil and add mustard seeds let them splutter for a bit and then add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds.
  3. Add Vegetables: Add chopped onions and cook them until translucent. Add tomatoes, carrots, potatoes, and drumstick. Cook for a few minutes.
  4. Add Spices and Tamarind: Now add the magical twist ie the sambar powder, salt, and tamarind pulp. Mix Mix Mix.
  5. Simmer: Now sit aside and let them cook for about 10-15 minutes and finally garnish with some coriander leaves.

Happy cooking!
