Chicken Pickle at Home Andhra Style Recipe

So, to make this mouthwatering spicy delight you just need to follow my instructions. Let's get into the cooking of Andhra Style Chicken Pickle!
Ingredients:
- A kg of Chicken (Boneless preferred)
- Sunflower Oil (400 ml)
- 60 gm Allam velluli paste (Ginger Garlic Paste)
- Salt to taste
- Red chili powder (Add according to your taste)
- A tablespoon of Fenugreek Powder
- Lemons Juice (3-4 lemons)
- A tablespoon of Turmeric
Steps to Make Chicken Pickle:
1. Prep the Chicken:
- Take your chicken and wash it and cut it into small pieces.
- Add salt and turmeric to the chicken pieces. Cook them in a non-stick pan on medium flame until the water evaporates. This step ensures the chicken is well-cooked and dry, which is essential for making pickles.
- Make sure that the chicken is well-cooked cause it is essential for the long life of the pickle.
2. Fry the Chicken:
- Heat oil in a pan and add the cooked chicken pieces. Fry them until all the moisture evaporates and the chicken becomes crispy. Once done, set the chicken aside.
3. Prepare the Masala:
- In the same hot oil, add ginger garlic paste and keep frying till the raw smell disappears.
- Now add the fried chicken to this paste along with fenugreek powder, salt, and pickles mirchi powder. Boil the mixture once and then switch off the stove. Let it cool completely.
4. Final Touch:
- After the mixture cools down, add lemon juice the more the better but keep on checking the sourness according to your taste and mix well. Transfer the pickle to a clean, dry bottle. For the best taste, let the pickle marinate for 3 days. This allows the flavors to meld and the chicken pieces to soften, absorbing all the spices and tanginess.
5. Storage Tips
- This chicken pickle can be stored in the refrigerator for up to 3 months and stays fresh outside for about 2 months.
- Make sure not to insert wet spoons while serving it will spoil the pickle.
