Ingredients
- Cooked rice 2 cups would be enough
- A cup of grated coconut
- Oil or Ghe according to your preference( 1 tablespoon )
- Mustard seeds
- Cumin seeds
- Dried chillies
- Curry leaves
- Peanuts or cashew nuts
- Chana dal (1 tablespoon)
- Urad dal (1 tablespoon)
- Slitted green chillies
- A pinch of Hing
- Salt to taste
- Fresh coriander leaves
Instructions
Step 1: Prepare the Rice
- Cook Rice: Cook the rice normally as you cook on a daily basis but make sure that the rice is fluffy and grains are separate. Fluffy rice can be easily mixed with the coconut mixture.
Step 2: Prepare the Coconut Mixture
- Heat Ghee or Oil: Take a large pan , heat some ghee or oil over medium heat.
- Temper Spices: Now add some mustard seeds to the oil and let them splutter after that add some cumin seeds, dried chillies and finally curry leaves. Let them cook for few seconds until aromatic.
- Add Nuts and Lentils: After that add some peanuts or cashew nuts, chana dal, and urad dal. Sauté until they turn golden brown and crunchy.
- Sauté Aromatics: Now add some slit green chillies and hing and let them cook for about a minute.
Step 3: Cook the Coconut Mixture
- Add Coconut: Add the grated fresh coconut to the pan. Cook on low heat for 3-4 minutes until the coconut is fragrant and lightly toasted. Be careful not to burn it.
- Season: Add salt to taste and mix well.
Step 4: Combine with Rice
- Mix Rice: Add the cooked and cooled rice to the coconut mixture. Gently mix to combine, ensuring the rice is evenly coated with the coconut and spices. Be careful not to break the rice grains.
Step 5: Garnish and Serve
- Garnish: Garnish with fresh coriander leaves.
- Serve Hot: Serve the Kobbari Annam hot with your favorite curry, pickle, or yogurt.
