- 2 teaspoons red chili powder
- 1 teaspoon turmeric powder

- 1 teaspoon cumin powder
- 1 teaspoon black pepper powder
- 2 tablespoons lemon juice
- Salt to taste
- A handful of fresh coriander leaves, chopped
- A few curry leaves, chopped
- Oil for deep frying
Instructions
Step 1: Marinate the Chicken
- Prepare Marinade: In a large mixing bowl, combine the ginger-garlic paste, red chili powder, turmeric powder, garam masala, coriander powder, cumin powder, black pepper powder, lemon juice, and salt.
- Marinate Chicken: Add the chicken pieces to the marinade and mix well to coat each piece evenly. Let it marinate for at least 30 minutes to 1 hour for the flavors to penetrate.
Step 2: Prepare the Batter
- Make Batter: After marinating, add the besan, rice flour, chopped coriander leaves, and curry leaves to the marinated chicken. Mix well to form a thick batter that coats the chicken pieces. If needed, add a little water to get the right consistency.
Step 3: Fry the Pakodi
- Heat Oil: Heat oil in a deep frying pan over medium heat.
- Fry Chicken: Once the oil is hot, carefully drop the batter-coated chicken pieces into the oil. Fry in batches, ensuring not to overcrowd the pan. Fry until the chicken pakodis turn golden brown and crispy, turning occasionally for even cooking.
- Drain: Remove the fried chicken pakodis with a slotted spoon and drain on paper towels to remove excess oil.
