Andhra Mirchi Bajji is spicy stuffed green chilies which add a burst of spicy goodness. Mirchi Bajji is a quick recipe which is a crispy snack. It wonderfully pairs with the coconut or tamarind chutney.

Ingredients

For the Stuffing:

  • 10-12 large green chilies (preferably less spicy varieties like Bhavnagri)
  • 1/2 cup roasted gram flour (besan)
  • 1 tablespoon roasted peanut powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon amchur (dry mango) powder
  • 1 teaspoon chaat masala
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1-2 tablespoons water (to bind the stuffing)

For the Batter:

  • 1 cup besan (gram flour)
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon baking soda
  • Salt to taste
  • Water (as needed to make a thick batter)

For Frying:

  • Oil for deep frying

Instructions

Step 1: Prepare the Chilies

  1. Slit Chilies: Wash and pat dry the green chilies with a clean cloth . Make a vertical slit on one side of each chili, keeping the stem intact. Remove the seeds carefully to reduce the heat.

Step 2: Prepare the Stuffing

  1. Mix Stuffing: In a bowl, combine the roasted gram flour, roasted peanut powder, cumin seeds, coriander powder, amchur powder, chaat masala, turmeric powder, and salt. Add a little water to bind the mixture into a coarse paste.
  2. Stuff Chilies: Carefully stuff each chili with the prepared mixture. Ensure they are well-stuffed and set aside.

Step 3: Prepare the Batter

  1. Make Batter: In a mixing bowl, combine the besan, red chili powder, turmeric powder, baking soda, and salt. Gradually add water to make a thick, smooth batter.

Step 4: Fry the Bajji

  1. Heat Oil: Heat oil in a deep frying pan over medium heat.
  2. Coat Chilies: Dip each stuffed chili into the batter, ensuring it is fully coated.
  3. Deep Fry: Carefully drop the coated chilies into the hot oil. Fry until they turn golden brown and crispy, turning occasionally for even frying. Remove with a slotted spoon and drain on paper towels.

Step 5: Serve

  1. Serve Hot: Serve the delicious Andhra Mirchi Bajji hot with coconut chutney, tamarind chutney, or tomato ketchup.
