- 2 cups basmati rice
- 4 cups water
- 1 bay leaf
- 4-5 green cardamoms.
- 4-5 cloves
- 1-inch cinnamon stick
- Salt to taste
For the Vegetables:
- 2 tablespoons ghee (clarified butter) or oil
- 1 large thinly sliced onion.
- 1 tablespoon ginger-garlic paste
- 1 cup mixed vegetables (carrots, peas, green beans, and potatoes), diced
- 1/2 cup cauliflower.
- 1/2 cup chopped bell peppers.
- 1 large chopped tomato.
- 1/4 cup curd.
- 2-3 green slit chilies.
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh chopped coriander leaves.
- Fresh chopped mint leaves.
For Layering:
- 1/4 cup fried onions
- A pinch of saffron threads soaked in 2 tablespoons warm milk (optional)
- Fresh chopped coriander leaves.

Instructions
Step 1: Prepare the Rice
- Rinse and Soak Rice: Wash the basmati rice under water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- Cook the Rice: In a large pot, bring 4 cups of water to a boil. Add the bay leaf, green cardamom pods, cloves, cinnamon stick, and salt. Add the soaked rice and cook until the rice is 70-80% cooked (it should still have a bite to it). Drain the rice and set aside.
Step 2: Prepare the Vegetables
- Sauté Onions: In a large pan or pot, heat 2 tablespoons of ghee or oil over medium heat. Add the thinly sliced onions and sauté until they are golden brown.
- Add Ginger-Garlic Paste: Add the ginger-garlic paste and sauté for another minute until fragrant.
- Cook the Vegetables: Add the mixed vegetables, cauliflower, and bell peppers. Cook for 5-7 minutes until the vegetables are slightly tender.
- Add Spices: Add the chopped tomato, curd, green chilies, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well and cook for another 5-7 minutes until the vegetables are fully cooked and the oil starts to separate from the masala.
- Add Herbs: Stir in the chopped fresh coriander and mint leaves. Remove from heat.
Step 3: Layer and Cook the Biryani
- Layer the Biryani: In a heavy-bottomed pot, start layering the biryani. Begin with a layer of the cooked vegetables, followed by a layer of the partially cooked rice. Repeat the layers until all the rice and vegetables are used up. Top with fried onions, saffron milk (if using), fresh coriander, and mint leaves. Drizzle with ghee or oil.
- Dum Cooking: Cover the pot with a tight-fitting lid. Cook the biryani on low heat for 20-25 minutes. Alternatively, you can place the pot in a preheated oven at 350°F (175°C) for 25-30 minutes.
