Ingredients
For the Marinade:
- 250 grams mushrooms, cleaned and halved
- 1/2 cup plain curd (use dairy-free curd for vegan option)
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon paprika (for color)
- Salt to taste
- Fresh cilantro leaves, chopped (for garnish)
For the Skewers:
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 large onion, cut into chunks
- Lemon wedges (for serving)
Instructions
Step 1: Prepare the Mushrooms
- Clean the Mushrooms: Clean the mushrooms with a damp cloth to remove any dirt. Cut them in half if they are large.
Step 2: Make the Marinade
- Mix the Marinade: In a bowl, combine the curd, lemon juice, olive oil, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, coriander powder, paprika, and salt. Mix well until you have a smooth marinade.
Step 3: Marinate the Mushrooms
- Coat the Mushrooms: Add the halved mushrooms to the marinade and toss them gently to coat evenly. Cover the bowl and refrigerate for at least 1 hour, or overnight for the best flavor.
Step 4: Assemble the Skewers
- Prepare the Vegetables: Cut the red bell pepper, green bell pepper, and onion into chunks that are roughly the same size as the mushrooms.
- Skewer the Ingredients: Thread the marinated mushrooms, bell peppers, and onions onto skewers, alternating the vegetables and mushrooms.
Step 5: Cook the Skewers
- Preheat the Grill or Oven: If grilling, preheat the grill to medium-high heat. If baking, preheat the oven to 200°C (400°F).
- Grill or Bake: Place the skewers on the grill or a baking sheet. Grill for about 10-12 minutes, turning occasionally, until the mushrooms are tender and slightly charred. If baking, bake for 20-25 minutes, turning halfway through, until golden and cooked through.
Step 6: Serve
- Garnish and Serve: Garnish the Tandoori Mushroom Skewers with fresh chopped cilantro leaves and serve with lemon wedges on the side. Enjoy them hot as an appetizer, side dish, or even as a main course with some naan or rice.
Happy cooking!
