Ingredients

Here are the ingredients that you'll need to create this delicious Tandoori Chicken:

For the Marinade:

  • 4 chicken legs (with thigh and drumstick attached)
  • 1 cup thick curd
  • 2 tablespoons lemon juice
  • 2 tablespoons ginger-garlic paste
  • 2 teaspoons red chili powder (adjust to taste)
  • 1 teaspoon turmeric powder
  • 2 teaspoons garam masala
  • 2 teaspoons cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon paprika (for color)
  • 1 tablespoon mustard oil (optional)
  • Salt to taste
  • Fresh coriander leaves and lemon wedges (for garnish)

Instructions

Step 1: Prepare the Chicken

  1. Score the Chicken: Make deep cuts in the chicken legs with a sharp knife. This helps the marinade penetrate and flavor the meat deeply.

Step 2: Prepare the Marinade

  1. Mix the Marinade: In a large mixing bowl, combine the curd, lemon juice, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, coriander powder, paprika, mustard oil (if using), and salt. Mix well to form a smooth marinade.

Step 3: Marinate the Chicken

  1. Coat the Chicken: Add the chicken legs to the bowl and coat them thoroughly with the marinade, ensuring the marinade gets into the incisions.
  2. Marinate: Cover the bowl and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to develop.

Step 4: Cook the Chicken

  1. Preheat the Oven or Grill: Preheat your oven to 200°C (400°F) or prepare your grill for medium-high heat.
  2. Bake or Grill: If using an oven, place the marinated chicken on a baking tray lined with aluminum foil. Bake for 25-30 minutes, turning once halfway through, until the chicken is cooked through and slightly charred. If grilling, cook the chicken on the grill for about 20-25 minutes, turning occasionally for even cooking and charring.




  3. Check for Doneness: Ensure the chicken reaches an internal temperature of 75°C (165°F) and the juices run clear when pierced with a knife.

Step 5: Serve

  1. Garnish and Serve: Garnish the Tandoori Chicken with fresh coriander leaves and lemon wedges. Serve hot with naan, roti, or steamed rice, along with a side of mint chutney and onion rings.
