  • 1/4 cup chopped pistachios
  • 2 tablespoons raisins
  • 1/2 teaspoon cardamom powder
  • 1/2 teaspoon rose water (optional)
  • A pinch of saffron threads (optional)

Instructions

Step 1: Prepare the Ingredients

  1. Soak Saffron: If using saffron, soak the Saffron in a tablespoon of warm milk and set aside.
  2. Cut Nuts and Dates: Prepare the nuts and dates by chopping them into small pieces. This ensures they mix well into the dessert.

Step 2: Roast the Vermicelli and Nuts

  1. Heat Ghee: In a large, heavy-bottomed pot, heat the ghee over medium heat.
  2. Roast Nuts: Add the almonds, cashews, pistachios, and raisins. Sauté until they turn golden brown and aromatic. Remove and set aside.
  3. Roast Vermicelli: In the same pot, add the vermicelli and roast until golden brown, stirring constantly to avoid burning.

Step 3: Cook the Sheer Khurma

  1. Add Milk: Slowly add the milk to the pot, stirring constantly to prevent lumps. Bring it to a gentle boil.
  2. Add Condensed Milk and Sugar: Stir in the condensed milk and sugar. Continue to cook on low heat, stirring occasionally, until the sugar dissolves and the mixture thickens slightly.
  3. Add Dates and Nuts: Add the chopped dates, roasted nuts, and raisins to the milk mixture. Stir well to combine.
  4. Flavor with Spices: Add the cardamom powder, rose water (if using), and saffron milk. Continue to simmer for another 10-15 minutes, allowing the flavors to meld together.

Step 4: Serve

  1. Serve Hot or Cold: Sheer Khurma can be enjoyed warm or chilled, depending on your preference. Garnish with additional chopped nuts and a few saffron threads before serving.

Tips for the Perfect Sheer Khurma

  • Richness: For an extra creamy texture, you can add a little evaporated milk or cream.
