Sheer Khurma: The sweet of the season

For all the sweet lovers out there you are familiar with the Sheer khurma which is mostly made on the special occasions mostly in our Muslim friends houses. They make the best Sheer Khurma ever. So, let's try to make it at our home without a due. It is especially made during Eid-ul-Fitr. It is a milk based sweet which is comforting and Luxurious treat for the whole family.

Ingredients
Here are the ingridents you will need to make this delicacy.
For the Sheer Khurma:
- 1 liter milk
- 1/2 cup condensed milk
- 1/2 cup fine vermicelli
- 1/4 cup sugar (adjust to taste)
- 2 tablespoons ghee (clarified butter)
- 1/4 cup chopped dates
- 1/4 cup slivered almonds
- 1/4 cup chopped cashews
- 1/4 cup chopped pistachios
- 2 tablespoons raisins
- 1/2 teaspoon cardamom powder
- 1/2 teaspoon rose water (optional)
- A pinch of saffron threads (optional)
Instructions
Step 1: Prepare the Ingredients
- Soak Saffron: If using saffron, soak the Saffron in a tablespoon of warm milk and set aside.
- Cut Nuts and Dates: Prepare the nuts and dates by chopping them into small pieces. This ensures they mix well into the dessert.
Step 2: Roast the Vermicelli and Nuts
- Heat Ghee: In a large, heavy-bottomed pot, heat the ghee over medium heat.
- Roast Nuts: Add the almonds, cashews, pistachios, and raisins. SautƩ until they turn golden brown and aromatic. Remove and set aside.
- Roast Vermicelli: In the same pot, add the vermicelli and roast until golden brown, stirring constantly to avoid burning.
Step 3: Cook the Sheer Khurma
- Add Milk: Slowly add the milk to the pot, stirring constantly to prevent lumps. Bring it to a gentle boil.
- Add Condensed Milk and Sugar: Stir in the condensed milk and sugar. Continue to cook on low heat, stirring occasionally, until the sugar dissolves and the mixture thickens slightly.
- Add Dates and Nuts: Add the chopped dates, roasted nuts, and raisins to the milk mixture. Stir well to combine.
- Flavor with Spices: Add the cardamom powder, rose water (if using), and saffron milk. Continue to simmer for another 10-15 minutes, allowing the flavors to meld together.
Step 4: Serve
- Serve Hot or Cold: Sheer Khurma can be enjoyed warm or chilled, depending on your preference. Garnish with additional chopped nuts and a few saffron threads before serving.
