Prawn Biryani is Flavorful which is a mixture of spices it is rich with the aromatic tantalizing flavor. Prawn biryani is easy to make which requires minimal ingredients, it is a complete meal that's both comforting and filling.
Ingredients
For the Biryani:
- 500 grams prawns, cleaned and deveined
- 2 cups basmati rice, soaked for 30 minutes
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/2 cup yogurt
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin seeds
- 1 bay leaf
- 2-3 cloves
- 2 green cardamom pods
- 1 cinnamon stick
- 2-3 green chilies, slit
- 2 tablespoons cooking oil or ghee
- Salt to taste
- 2 cups water
For the Rice Layer:
- 1/4 teaspoon saffron strands, soaked in 2 tablespoons warm milk
- 1 tablespoon ghee or butter
- 1 onion, thinly sliced and fried till golden brown (for garnishing)
Instructions
Step 1: Prepare the Prawns
- Marinate the Prawns: In a bowl, mix the prawns with half of the ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and yogurt. Let it marinate for at least 15-20 minutes.
Step 2: Cook the Rice
- Boil the Rice: In a large pot, bring water to a boil. Add salt, a few drops of oil, and the soaked basmati rice. Cook the rice until it's 70% done. Drain and set aside.
Step 3: Prepare the Biryani Gravy
- Heat Oil/Ghee: In a large, heavy-bottomed pan, heat the oil or ghee. Add cumin seeds, cloves, green cardamom pods, cinnamon stick, and bay leaf. Sauté for a minute until fragrant.
- Sauté Onions: Add the sliced onions and sauté until they turn golden brown.
- Add Ginger-Garlic Paste: Stir in the remaining ginger-garlic paste and green chilies. Cook for another 2-3 minutes until the raw smell disappears.
- Add Tomatoes and Spices: Add the chopped tomatoes, coriander powder, and salt. Cook until the tomatoes are soft and the oil starts to separate from the mixture.
- Cook the Prawns: Add the marinated prawns to the pan. Cook for 5-7 minutes until the prawns are tender and cooked through. Stir in the fresh coriander and mint leaves. Set aside.
Step 4: Layer the Biryani
- Layer the Rice and Prawns: In the same pan, spread half of the cooked rice. Layer the prawns and then the remaining rice on top. Drizzle the saffron milk and ghee over the top.
- Simmer: Cover the pan with a tight-fitting lid and cook on low heat for 15-20 minutes. This allows the flavors to meld together. You can place a heavy weight on top of the lid to ensure the steam doesn’t escape.
Step 5: Garnish and Serve
- Garnish: Once done, gently fluff the biryani with a fork. Garnish with fried onions and additional mint leaves.
- Serve Hot: Serve the Prawn Biryani hot with raita, salad, or a side of your choice.
