This Paneer Butter Masala is Creamy and Rich packed with falvorful spices along with this it is a Vegan delight that's much better for the vegans out there.

Ingredients

For the Paneer:

  • 250 grams paneer (Indian cottage cheese), cubed
  • 2 tablespoons butter (divided)
  • 1 tablespoon oil

For the Gravy:

  • 2 large tomatoes, chopped
  • 1 large onion, chopped
  • 2 tablespoons cashew nuts
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, slit
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon sugar (optional)
  • Salt to taste
  • 1/2 cup fresh cream
  • Dried fenugreek leaves 
  • Coriander leaves 

For the Tempering:

  • 1 tablespoon butter
  • 1 teaspoon cumin seeds
  • 2 bay leaves
  • 1-inch cinnamon stick
  • 2-3 green cardamom pods
  • 2-3 cloves

Instructions

Step 1:  The Paneer preparation

  1. CookPaneer: In a pan take some butter and add those fluffy paneer cubes and fry them until they are golden brown.  Remove and set aside.

Step 2: Gravy preparation

  1. Cook Onions and Cashews: In the same pan, take some chopped onions along with cashews and fry them as well. 
  2. Add Tomatoes and Spices: Now it's time to sweeten and spice up the gravy so for sweetness add some tomatoes and for spice add ginger-garlic paste with some green chilies and cook them until they become soft like you. 
  3. Blend the Mixture: Now take that mixture and blend it into a paste.

Step 3: Cook the Gravy

  1. Temper the Spices: Take a large pan add some butter to it then its time to add those cumin seeds , cardamom pods, bay leaves and cinnamon stick and fry them for a minute. 
  2. Cook the Gravy: Now add the paste that we previously made.
  3. Add Spices: Keep stirring the mixture and add chili powder, garam masala, turmeric powder, coriander powder, cumin powder, and salt. 
  4. Add Cream and Kasuri Methi: Now it time to lower the flame and add some cream and then let it cook for 5 minutes. 

Step 4: Combine and Serve

  1. Add Paneer: Now its time to finish the recipe by adding the paneer cubes to the gravy and keep cooking for more 2-4 minutes this is important because this ensures that paneer absorbs the flavors.
