Double Ka Meetha: The Royal Hyderabadi Dessert

Hello, Cookeazy Family! We have a treat for the desert enthusiasts today that is Double ka Meetha! I'm very much excited to share the recipe for the Royal Hyderabadi desert Double Ka Meehta. This desert is very rich with creamy bread pudding which is loved across Hyderabad for festive and special occasions. It's easy to make and it requires less ingridents but there is no compromise in the taste of the desert. So, let's get cooking the Royal Hyderabadi Double Ka Meetha.

Double Ka Meetha is easy to make with it's rich and creamy texture which is best for the festive occasions and for someone special it introduces the taste of Hyderabadi cuisine to the people.

Ingredients

The ingredients you'll need to make this delicious desert are mentioned below: 

For the Bread:

  • 6-8 slices of white bread
  • 4 tablespoons ghee 
  • 1/4 cup sliced almonds
  • 1/4 cup chopped cashews
  • 1/4 cup chopped pistachios
  • 2 tablespoons raisins

For the Milk Syrup:

  • 1 liter full-fat milk
  • 1/2 cup condensed milk
  • 1/2 cup sugar (adjust to taste)
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron threads (optional)
  • 1/2 teaspoon rose water (optional)

Instructions

Step 1: Prepare the Bread

  1. Trim the Bread: Remove the edges of the bread slices and cut them into triangles or squares.
  2. Fry the Bread: In a large pan, heat the ghee over medium heat. Fry the bread pieces until they are golden brown and crispy. 

Step 2: Prepare the Nuts

  1. Roast the Nuts: In the same pan, add the sliced almonds, chopped cashews, chopped pistachios, and raisins. Roast them until they are golden and fragrant. Remove and set aside.

Step 3: Prepare the Milk Syrup

  1. Boil the Milk: In a large pot, bring the milk to a boil. Reduce the heat and simmer, stir occasionally, until the milk reduces by about half.
  2. Add Condensed Milk and Sugar: Stir in the condensed milk and sugar. Continue to simmer until the mixture thickens slightly.
  3. Add Flavors: Add the cardamom powder, saffron threads (if using), and rose water (if using). Mix well and remove from heat.

Step 4: Assemble the Double Ka Meetha

  1. Layer the Bread and Milk: In a serving dish, arrange a layer of the fried bread pieces. Pour a portion of the milk syrup over the bread, ensuring they are well soaked. Repeat the layers until all the bread and syrup are used up.
  2. Top with Nuts: Sprinkle the roasted nuts and raisins on top.

Step 5: Chill and Serve

  1. Chill: Allow the Double Ka Meetha to cool to room temperature, then refrigerate for at least 2 hours to let the flavors meld together.
  2. Serve: Serve chilled or at room temperature. Garnish with additional nuts and saffron threads before serving, if you want to.



Tips for the Perfect Double Ka Meetha

  • Fry the Bread: Frying the bread in ghee gives it a rich flavor and crispy texture, which is essential for this dessert.
  • Reduce the Milk: Allow the milk to reduce by half for a thicker, creamier consistency.
  • Adjust Sweetness: Taste and adjust the sweetness according to your preference.
  • Chill Time: Letting the dessert chill allows the bread to absorb the milk syrup fully, enhancing the flavors.
