Chicken Dum Biryani

Hello, Cookeazy family! It's time for some Chicken Dum Biryani fam. Why order it when you can make it at your home. I know it's a lot of work in making it but atleat you will feel proud and happy with each bite knowing how much effort got into making it and believe me if it turned out good then you will make it every time and try to make it everytime. So no more delay cause the more I delay there is a higher chance that you will order it. 



Ingredients

For the Chicken Marinade:

  • 500 g chicken thighs or drumsticks, skinless and bone-in
  • 1 cup crd
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste

For the Rice:

  • 2 cups basmati rice
  • 4 cups water
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1-inch cinnamon stick
  • 1 bay leaf
  • Salt to taste

For the Biryani:

  • 2 tablespoons ghee (clarified butter) or vegetable oil
  • 2 large thinly sliced onions. 
  • 2-3 slit green chilies.
  • 2 chopped tomatoes. 
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon black pepper powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon saffron threads soaked in 2 tablespoons warm milk (optional)
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/2 cup fried onions (for garnish)
  • Fresh lemon wedges (for serving)

Instructions

Step 1: Let the chicken marinate

  1. To make the marinade, combine the curd, turmeric, red chili powder, garam masala, ginger-garlic paste, and salt to taste.Now ad chicken to this mixture and coat them with this then put them in the fridge for about 1 hour.

Step 2: Preparing the rice 

  1. Rinse and soak: Take the basmati rice wash them and soak them in the water for about 30 minutes.
  2. Prepare the rice: Now take a Heavy bottomed pot and add the rice into it with sufficient water and then add the spices that are as follows : cardamom pods, cloves, cinnamon stick, bay leaf, salt, and soaked rice. Cook this mixture and make sure that rice is not fully cooked.

Step 3: Cook the Chicken

  1. Add the spices and chicken: Heat the oil in a heavy-bottomed saucepan, then sauté the onions until golden brown. Next, add the cumin seeds and green chilies, followed by the marinated chicken. Cook the chicken until it browns.
  2. Add Tomatoes and Spices: Now add the tomatoes, black pepper, garam masala, and coriander powder. Cook. 

Step 4: Assemble the Biryani

  1. Layer the Biryani: Now remove the pot and take that partially cooked rice and spread it ove the chicken mixture. Add some coriander and mint leaves and fried onions on top of it and repeat this with another layer. 
  2. Dum Cooking: Now it's all about waiting just cover the pot tightly and let it cook for about 30 minutes . This ensures that the flavor are blended consistently. 

Step 5: Serve

  1. Garnish and Serve: Take off the lid add garnish it with some fried onions and lemon slices.
