Aloo Gobi: A Classic Indian Comfort Food

We had shared a lot of delicasies over the time we have covered almost most of the exotic dishes and now its time we get back in to our kitchen and make same comforting food like Aloo Gobi. Aloo Gobi is a regular household dish prepared across Indian as a staple food. Aloo Gobi is a mixture of tender potatoes and cauliflower cooked in a blend of spices. It is not only healthy but you can eat it with any meal. So let's dive into the making of this simple household dish of India.

Ingredients

Here’s what you’ll need to create this delicious Aloo Gobi:

For the Main Dish:

  • 2 medium potatoes, peeled and diced
  • 1 medium cauliflower, cut into florets
  • 2 tablespoons oil (vegetable or mustard oil)
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions

Step 1: Prepare the Vegetables

  1. Prep the Potatoes and Cauliflower: Peel and dice the potatoes into bite-sized pieces. Cut the cauliflower into medium-sized florets. Rinse both vegetables under cold water and drain well.

Step 2: Cook the Aloo Gobi

  1. Heat the Oil: In a large pan or wok, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds until they are fragrant.
  2. Sauté the Onions: Add the finely chopped onions to the pan and sauté until they are golden brown.
  3. Add Ginger-Garlic Paste: Stir in the ginger-garlic paste and green chilies. Cook for another 1-2 minutes until the raw smell disappears.
  4. Cook the Tomatoes and Spices: Add the chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil begins to separate from the masala.



  5. Add the Vegetables: Add the diced potatoes and cauliflower florets to the pan. Mix well to coat the vegetables with the spice mixture.
  6. Cover and Cook: Cover the pan and cook on low heat for about 15-20 minutes, stirring occasionally, until the potatoes and cauliflower are tender. If needed, sprinkle a little water to prevent sticking and to help cook the vegetables.
  7. Finish with Garam Masala: Once the vegetables are cooked through, sprinkle the garam masala over the top and mix gently.

Step 3: Serve

  1. Garnish and Serve: Garnish with freshly chopped coriander leaves and serve hot.
